With a daughter who is vegan and armed with my nutritional background I embarked on a journey to make the perfect Vegan sugar cookies.
My first attempt was almost perfect. The cookies came out delicious! My biggest challenge was the frosting. How do you make royal icing without eggs? After reviewing some tips n recipes I ended up using my regular recipe with egg substitute to make the icing fluffy then a little corn syrup to get the icing to harden like regular royal icing.
The results, well my daughter took them to work and no one could even tell they were vegan!The only real difference is that the frosting is a little harder to pipe for me.
